Raspberry Ice Cream Cake!



I got this recipe from Kraft but tweaked it a little since I needed to use up some raspberries.  

Here's what you need:

12 ice cream sandwiches
1 pkg of instant chocolate pudding (3.9 oz)
1/2 cup hot fudge ice cream topping
8 oreos (crushed into chunks)
1 container (8 oz) Cool Whip
 16 oz. raspberries (optional)

Start by mixing the fudge, pudding powder and one cup of the cool whip together.  Beat for 2 minutes. Add oreo chunks.

Lay out a large piece of tinfoil.  Put down four ice cream sandwiches.  Top with a layer of the fudge mixture.  


Top with raspberries.  Repeat.



Top with the remaining 4 ice cream sandwiches.


I used frozen raspberries that had a lot of liquid in them.  I wouldn't do that again.  They tried to leak out everywhere while I made the cake and it made for REALLY hard frozen chunks in the cake later...

Frost the outside with the remaining Cool Whip.


Wrap the tinfoil straight up the sides but wrap very loosely across the top.  If you decide not to wrap it loosely, you'll regret it because the tinfoil will stick to the top of your cake in little chunks.


Give everything an hour or two to harden. 

Slice and enjoy!  It is SO good, it will make you feel a little like this:
